Turkey Spinach Moussaka

Ok, so it’s not your traditional Moussaka, but last time I made it, that’s what everybody equated it with, so that’s what I’m calling it, with apologies to those who might take offense.

1pkg ground turkey
1 sm yellow onion, chopped
4 sprigs rosemary. chopped
4 bay leaves, fresh
Garlic Mashed Potatoes  - make them however you like, but you’ll need enough to cover 1″ thick in your casserole dish.
1 pkg spinach, fresh, or frozen (thaw and drain first!)
4 c ricotta cheese, room temperature
Olive Oil
Salt
Pepper

In a large skillet, brown the turkey with the chopped onions and some chopped garlic. Once browned, add the rosemary and bay leaves, and cook for 2 minutes more. Drain off any water remaining after cooking, and remove from heat.

Toss the spinach in a pan with salt, oil and sliced garlic until warm throughout.

Oil the bottom and sides of a large casserole dish, and add the cooked turkey mixture. Spread the ricotta cheese over this layer. Spread the garlic-spinach as the third layer. Top with 1″ of garlic mashed potato.

Bake the casserole for 20-30 minutes in a 350deg oven, spreading butter or garlic-oil over the top every 5-10 minutes. It’s ready when the potato layer turns a beautiful golden-brown, and the casserole is bubbling at the edges.

Serve immediately.

Herbed Stuffed Chicken Breast

4 Large whole chicken breasts, boneless, skinless
4 slices thick cut ham (1/4in)
4 slices thick cut mozzarella cheese (1/4in)
1x bunch basil
12 sprigs fresh rosemary
2c sliced mushrooms
2c diced yellow onions
2c croutons or stuffing mix, plain (don’t use store bought, make your own using toasted bread cubes!)
1c cream of mushroom soup, conc.
Garlic (Fresh!)
Olive Oil
Salt
Pepper

Clean and dress chicken breasts, removing the flap. Slice each 3/4 deep lengthwise as a place for the stuffings. In a small frying pan, saute onions and chopped garlic with olive oil, when translucent, add mushrooms, and a handful of chopped basil. Toss, remove from heat, and set aside to cool. Combine breadcrumbs with onion/mushroom mixture and add salt and pepper to taste (no, this isn’t the stuffing, strangely enough…).

Wrap the cheese in the ham, and slide into the center of the chicken breasts, adding a single spoonful of the soup, 1 whole clove of garlic, and 2 sprigs of fresh rosemary. Coat a baking or roasting pan with olive oil, and place the stuffed chicken pieces in it. Dilute remaining soup with milk(good) or cream(better), and combine with remaining basil and rosemary (chopped!). Pour this mixture over the chicken, and bake in a 425deg oven for 20 minutes.

Remove chicken from the oven, and reduce heat to 350deg. Cover the chicken with the breadcrumb mixture. Moisten with a few spoonfuls of drippings from the pan, return to the oven, and bake for another 20 minutes, or until temperature reaches 185deg on chicken. Remove from oven, and allow to sit for 5 minutes before serving.

Hot & Sour Soup

4c Veg Stock
1/2 c sliced mushrooms
1/2 c thin sliced bamboo shoots
1/2 package tofu cut into 1/2″ cubes (about 1.5 c)
4tbsp white vinegar (rice vinegar is even better)
3tbsp soy or tamari sauce
3tbsp corn starch or fine white rice flour
1/4 c water
3/4 tsp sesame oil
1 egg, beaten
2 scallions, sliced on bias

In a large pot or deep wok heat veg stock to boiling. Add mushrooms & bamboo. Reduce heat and simmer for 5 minutes. Add tofu, vinegar, and tamari/soy. In a small bowl blend rice flour/corn starch and water until smooth. Add to soup, stirring. Add pepper, sesame oil and slowly pour the egg into the soup. add scallions, and simmer for a few minutes more.

This recipe is good with traditional american egg/wheat noodles, but I definitely suggest dropping some fresh wide rice noodles in if you can find them (Sen Yaay) (link)

Dreamweaver 8 Crashing on Open (Site Cache Issue)

Dreamweaver 8 Crashes as soon as you open it? Easy - this is a broken site cache problem.

I recommend turning the site cache off if you don’t use it, or don’t want Dreamweaver to manage your links, paths, etc in documents that you move or alter.

In Windows VISTA, go to:

C:\Users\%USERNAME%\AppData\Roaming\Macromedia\Dreamweaver 8\Configuration\SiteCache\

Locate the folder and the .DWS file for the site in question (the name will match) and DELETE THEM BOTH! This will generally be the last site you had open in Dreamweaver. If you don’t know what the site is, delete them all — you can always move them elsewhere and start Dreamweaver to find out.

Once you’ve done this, OPEN DREAMWEAVER and allow it to recreate the site cache files.

If you moved/deleted all your sites, re-create the site cache on all of them, or move the other site cache files that you saved back in place!

This won’t affect the site definition in any way, as Dreamweaver stores that information in the Windows Registry.

Earth Day

Happy Earth Day! It’s April 22nd, 2008, and Earth Day is here. If you haven’t figured it out yet, most respectable scientists (excluding the creationist rabble) agree that the impact of the human race on this planet is starting to add up to a negative balance.

While my cynical side is tells me that it’s disgusting that many people only act in an environmentally aware manner when it’s pointed out to them (or it’s that single Earth Day), I also know that every single one of us can help change this.

Little things matter a great deal, with billions of us already here, and more to come. Start simple, start small. How? Pickup your trash. Sort and recycle your paper, plastics and metal. Swap your old light bulbs for compact, long-life florescents.  Wash your clothes on the cold cycle (it’s better for them anyway). Source your food from certified organic sources. Walk somewhere instead of driving. If you need more ideas, try a site like treehugger.com or look for ideas on Google (try this for earth day activities)

Internet Black Holes

Ever tried to find a website somebody linked you to, only to find you can’t see it, but they can? You may be the victim of an Internet Black Hole. Essentially, like a stellar black hole, the packets go in, but never come out, or back. The research comes from the U of Washington, which developed a program search out and identify troublesome spots on the internet. Google Maps Activity for Internet Explorer 8 (Beta)

A few weeks back, Microsoft released a Beta of Internet Explorer 8. After trying it out, and kicking the tires on both a Vista and an XP system, I can definitively say that It has some neat features; conversely it also has some bugs (I’ll get to those in a moment). If you’d like to play with it, you can download it from Microsoft.

One of the neat features is a context based submission, where, by highlighting some content on a web page, you can send that content to another website, very similar (ok damn near identical) to an HTTP POST or GET request. As an example of this, I’ve created an Activity that submits and plots an address in Google Maps.

You must have Internet Explorer 8 installed to use this feature. To install it, use the button below.

Now, on to the bugs. IE8 tends to render some AJAX style pages as trash, depending on the compatibility mode you’re running it in. — Try Google Maps with IE 7 mode on — it’s borked.

IE 8 also includes a memory protection feature that can be switched on (default is off) to prevent some types of hack that would normally pwn lesser versions of IE. Turning this option on in a Vista PC rendered the browser useless. It would start, hang, crash, offer to restart itself, restart, hang, crash, etc., etc.. Nice huh? And, since Outlook, and other Microsoft applications use the IE engine to render HTML, all my HTML emails and other features were dead in the water.

It can be fixed by hacking the registry key that controls the feature to disable it. — Not something that was a lot of fun to find or fix.

That’s it for my initial look at IE 8, I’ll post more details as I discover more about the latest toy from Microsoft.

My UT2004 Maps

Late in my time playing UT2004, I developed an interest in mapping for UT2004, and after watching the editing tutorials on the Editor’s Choice Edition of UT 2004, and playing around, I produced 3 remakes, and 1 original map. They were all released together in the Crackaz Map Pack 1.1, and as individual files. This section details those maps and their creation. You’ll also find some old and incomplete textures. Check the DOWNLOADS section to find all the files and goodies. In most cases the Readme files will tell you what you need to know.

You could always explore the Mapping - 2004 (UT2) section of the site too…
